Oven baked papaya with lime and vanilla coconut ice cream
Papaya is paired wonderfull with the coconut ice cream
Preparation time 25 minutes
1 papaya, halved, seeds removed
1 lime, juice and zest of it
2 tbsp thyme honey
Half vanilla pod, split lengthways
50g coconut flakes, toasted
200g Vanilla ice cream Preparation method
1. Preheat the oven to 180C/350F/Gas 4.
2. Make a mixture of the lime juice and its zest, the honey, and the vanilla pod. Place the papaya into a small baking tray, cut side up. Brush with the mixture over the papaya, and then place in the oven and bake for 6-8 minutes, or until the papaya is tender. Remove the papaya from the oven and transfer to a serving plate. Roll the vanilla scoops on the coconut flakes and serve immediately.
