Coconut and cinnamon cookies with Vanilla ''submarine''

Cokies cookies cookies everywhere

Preparation time 40 minutes
Gives 12 biscuits

100g unsalted butter ,at room temperature
50g caster sugar
150g self raising flour
1 tsp cinnamon, powder
3 tbsp desiccated coconut

For decoration
2 tbsp coconut flakes, toasted
3 tbsp vanilla ‘’submarine’’

Preparation method
1.Preheat the oven to 180 C.
2. Rub the butter into the flour and the coconut, by hand or in a food processor, until the mixture looks like fine breadcrumbs. Stir in the the sugar and the cinnamon powder. Wrap the dough with a cleaning film and leave it to rest in the fridge for 20 minutes.
3. Knead briefly on a work surface lightly dusted with flour until smooth and cut into 4cm /2in biscuits. Carefully lift them onto a lightly buttered baking sheet, then knead together and re-roll the trimmings to make more biscuits. You should make about 12 biscuits in total.Bake for 15 minutes until golden brown and then let a wire rack to cool. Decorate the cookies with a little bit of vanilla and coconut flakes.
