Chutney with cranberry and apples
Ideal Christmas present for friends
Preparation time 20 minutes
150g apple cut into small cubes
50g dried cranberries
1 clove garlic, crushed
1 white onion, finely chopped
1 tbsp in sunflower
60g brown sugar
50g apple juice
35g white vinegar
1 tsp ginger powder
1 tsp coriander grainsPreparation method
1. Heat in a small pan the apple juice the vinegar, the sugar and the cranberries.
2. Heat the oil in a small pan and add the onions the garlic and the apples. Cook out for 5-8 minutes or until softened. Add the vinegar mixture and cook out for a further 3-5 minutes or until the chutney has caramelised slightly.
3. Serve with a variety of hard cheeses.
