Creamy mushroom ragù with Cheddar crumble

Cheddar crumble is the star

Serves 4


For the ragù
500g fresh button mushrooms, chopped
1 medium onion, chopped
1 clove garlic, chopped
70g unsalted butter
Salt, and freshly ground black pepper
200g mascarpone
1 tbsp chopped parsley

For the crumble
50g flour
40g Cheddar cheese, grated
20g butter ,at room temperature
1tbs sugar
½ tsp chilly powder

Preparation method
1.Preheat the oven to 170 c/325f/gas 3.
2. For the crumble, mix all ingredients in a bowl. Spread the mixture uniformly in a nonstick baking tray and bake until golden brown for about 10 minutes, and set aside to cool down.
3. For theragù , heat the butter in a frying pan, and add the onion, garlic .Fry gently until soft then add the mushrooms and continue to fry until golden brown. We leave on low heat to cook the mushrooms for 5 minutes. We season to taste with salt and freshly ground pepper, we add the parsley and leave aside to cool.
4.For serving, toss mushrooms with mascarpone, divide into four fireproof bowls, add the crumble on top and place in oven for 5 minutes until golden brown.
